Good news! I’ve discovered that there are actually more hours in the day! Unfortunately you find them before 6:00am. I’ve been up this week around 5:15am to get a few more things done before my day “begins.” I usually wait to eat breakfast with Hailey, so instead, I’ve been starting with drinks. Drinks at 5:15am? Now we’re talking!
A cup of ACV and lemon, followed by a cup of green tea.
By 8:00am, I felt like super woman (because she feels accomplished, right?) and I went to get Hailey up for breakfast.
2 eggs scrambled with cherry tomatoes, kale, parsley and herbed goat cheese. Half a banana and 1/2 slice of wheat toast with peanut butter.
We skipped the gym because our pediatrician told us that the flu has really kicked up into high gear this past week and I have too much to do these next few days to risk it… not that hanging around our house is much better. David just got over a nasty stomach flu. He lost 10 pounds in 2 days. I’ve disinfected the house twice and washed every blanket in scolding water.
Poor guy!
Brown rice, Great Northern beans (from my food prep), kale, cherry tomatoes, feta and balsamic dressing.
I ate a snack while Hailey ate lunch. She went down for a nap and I went out for a run.
Gosh I’ve missed running outside! It felt amazing.
Salad with leftover chicken and leftover roasted potatoes. Seltzer on the side.
After lunch and nap Hailey and I headed towards the mall; I thought she may need new shoes. I was right. She measured at 5.5 and I’ve been squeezing her foot into 4.5. There was only one problem… Hailey was scared of putting new shoes on her feet.
We caused quite the scene.
To cheer her back I thought we’d visit the Easter bunny, but the cheapest you can get in to see the guy is $22. Are you kidding me? Who does this bunny think he is? Santa?
We waved from behind the blockade.
Back home- more snacks!
After Hailey went to bed (we’re finally back on schedule- 7pm!), I got to playing in the kitchen.
I’ve never cooked whole clams before and it was so much fun! I loved watching the pop open and scooping them out.
I had so much fun that I forgot to sauté the kale. Oh well, dinner was great as a one dish meal!
I had two servings on the linguine with clams.
Around 8:00pm I sat on the couch and knew I wasn’t getting back up. One episode of Glee (I’m so behind) while David played on the computer and 1 episode of Rules of Engagement later, we were off to bed… at 9:30pm. It was glorious.

$22 to see the Easter bunny!!! Wow! That is expensive. But on the up side, at least this is a tradition that you still have. Up here in Canada, we don’t have Easter bunnies that you can visit like Santa 🙁 By the way, I love your backsplash!

She said she just peeled and cubed it then tossed it with a little olive oil and garlic. Roasted on 350 about 45 minutes. I tasted it and thought it had a softer texture than potatoes…more like squash maybe? But the taste was kind of like a potato. Very yummy!

That seriously looks like my ultimate breakfast! Veggies in scrambled eggs are the best, and toast w/ PB is such a comfort food to me.

Believe it or not, I’ve always been intimidated by yeast! Every time I’d see a recipe that called for yeast I’d immediately think “Oh, no, I”m not going to make that, it’s too much work.” But then I tried your homemade pizza dough recipe, and it was so easy! So thanks for that 🙂

So back when I wasn’t a vegetarian, I decided to make tilapia for me and Vishnu. I didn’t know anything about cooking fish at the time (still don’t) so I just went to Kroger and picked some out of the frozen section (big mistake). When I got home, I realized that the fish still had bones in it and overall was still very fishy looking. It was icky for me that I started crying. I had to throw it out and make something else. Haha.

Glad the clams were a success! I’m not scared of much, but there are a lot of recipes/techniques I haven’t tackled…like making a souffle. DON’T be scared of kohlrabi…it looks freaky weird, but it is easy as broccoli stalk to deal with. [That’s what it reminds me of. :)] I’m actually planning a post on its kookiness.

I steamed some frozen shrimp once and they turned out so rubbery that, even though I loved the recipe, I am too scared to try them again and ruin them (they are pricey!). I’ll leave those to the professionals!

I think H gave it to David (though her’s was less severe). I am washing my hands like crazy and praying I can avoid it. I’ve heard people can be contagious for up to 2 weeks though- yikes!

You have to buy a picture package which ranges from $22-$50. RIDICULOUS. You aren’t even allowed to bring your camera with you. Sad.

I love clams, but I’m definitely afraid of them! The only way I’ve ever had clams are at a clambake in those giant cookers, or when my dad would put them on the grill (no idea how that works). Can you share what recipe you used?

It was very good, but I wish it would have had more sauce. After my first serving, the noodles seemed a little dry. Maybe add more wine? That’s always a good idea 🙂

I too wake up early to get things done before my little guy wakes up. Luckily with the time change, he’s been sleeping in a little longer so I’m not having to wake up as early 🙂 It is nice to feel accomplished by the time he gets up!
I am fighting off a cold again! Since New Years we’ve gone through the flu, a few bad colds, ear infections, and sinus infections between myself, my hubby and my son. It’s so hard because I love taking him to gymnastics, public places like the library and story time as well as the gym daycare but think he’s bringing home lots of germs. I don’t want to take any of these fun things away from him but am debating staying home for a few weeks to wait out this cold/flu season! Horrible!

We do the same thing! It’s hard filling up the week without going to public places, but I think we’ll take this week off and jump back in next week. I can’t for wait for germ season to be over. I also think drinking ACV is helping keep me healthy (knock on wood). Maybe it’s just placebo, but either way, I like it 😉

Actually, now that you say that about the ACV, I was drinking it daily the whole month of January and didn’t get sick at all. I quit because I was having some stomach discomfort but that could have also been from the fish oil I was taking right after to avoid the taste. Maybe I’ll start adding it back in my diet to see if that helps. Thanks Brittany! Yes, can’t wait for this germ season to be over!

I took a cue from you and made one of my 2013 goals to cook with 5 new-to-me foods. I haven’t started yet, but clams or mussels although I’ve eaten them, just never cooked them myself) may be a good one to start with! Any other oddities you would suggest?

I am intimidated to cook with chicken with bones, I usually go for the breasts, but honestly i eat meat outside, but it kinda grosses me out touching it. 🙂

I’m afraid to cook steak, believe it or not. A college professor invited PETA to present to my philosophy class and was a vegetarian for a while after that. Ever since, I haven’t been able to eat meat that still looks like flesh. If its ground up or whatever, I’m fine. I’m weird.

Isn’t it funny how the change of season always brings out the nasty germs. We here in South Africa also struggles with stomach flu’s and cold/flu’s currently. We’re now in Autumn.
