Yesterday started off with the most delicious breakfast. In fact, I’d be OK if I repeated it every single day for the rest of spring (and summer because there are only 2 days left in spring).
Fried egg and avocado on sourdough with sriracha. Blackberries and cherries on the side.
The morning brought my triumphant(ish) return to hot yoga. More about that later, but I’m typing this morning with sore shoulders, triceps and back. It hurts so good.
I returned home famished.
Homemade tuna salad and avocado on Udi’s gluten free millet and chia bread. Carrots and 1/2 a plum (split with Hailey) on the side.
While making lunch, I hopped on dinner prep, too. After all, I was on a mission to use up my plethora of produce. I saw a salad on the Whole Foods salad bar that I decided to try and recreate, more simply, at home. It started with kale.
I started with 1 bunch of kale. I washed and patted it dry, then ripped it into bite sized pieces. Then, with clean hands, I massaged the kale for about 3-4 minutes, until it felt more tender and reduced in ‘fluffiness’ by about half. This process makes it easier to eat and digest.
I added carrots, red onions, edamame, cashews and the homemade dressing, made with ACV. I then mixed it well, covered it and put it in the fridge.
The afternoon was spent at a meeting at Discovery Place in Charlotte. There are some really exciting things developing there and David and I are excited to be involved with an organization we believe so strongly in.
We also believe in pretty strongly in snacks.
I split the dark chocolate bar and the (new) Clif granola bar (delicious!) with David in the car, then returned home for a couple handfuls of chips and hummus while I got dinner ready.
Super Food Kale salad, broiled salmon and grilled (on the George Foreman) shrimp skewers.
The salad turned out great!

Summer produce cravings are currently: blueberries, raspberries, and strawberries, and all 3 are in my fridge. Breakfast is a wonderful dish every day and totally worth the extra bucks for those raspberries. 😉

I LOVE massaged kale salads! I’ve actually been massaging my kale with olive oil, sea salt, pepper and nutritional yeast before making it into kale chips. The problem is, I eat half the massaged kale before it gets in the oven! So good! Oh and my son likes it too! Score!

My tuna salad is ridiculously simple- canned tuna, sweet relish, celery and a small amount of mayo. Salt and pepper if necessary 🙂
