Man oh man, there is a lot of baby talk happening around here lately. Please bear with me as I play catch up. I took way too many notes and have an uncontrollable urge to share it all.
So for this installment of Munchkin Meals, I’m sharing foods I relied on during the first trimester to keep Hailey eating pretty well while I battled nausea and fatigue. (It’s not nice to call it laziness, even if that’s how it felt, right?)
I usually don’t rely on many pre-packaged items for the main reason of the cost adds up quickly, but they did help me bridge the gap until I began feeling better and was capable of getting back in the kitchen.
All of these meals took less than 3 minutes to put together.
While I wasn’t up for cooking veggie eggs, Hailey ate a lot of oatmeal. These heat ‘n eat cups from Love Grown saved the day. They microwave in 60 seconds and I’d add frozen blueberries, almond milk and chia seeds to give it a nice overall balance. Best of all, Hailey loved searching for blueberries while she devoured breakfast.
Snacks were kept simple. Things like orange slices and Greek yogurt at home, and Annie’s Cheddar Squares, pretzels and craisins for while we were on the go.
I always tried to grab a few new things at the grocery store (when I didn’t feel like gagging), so help keep things interesting for Hailey.
She loved these Applegate Farms hotdogs and I loved that I could microwave them in a minute and provide her with protein.
However, when meat didn’t sound good, I’d use other sources for protein.
I love me some frozen veggies. They’re frozen at their peak and are ready to use whenever you need them. I did my best to include a veggie with every dinner since fruit was easier to prepare quickly when I wasn’t feeling well.

I’d also keep easy foods to prep, like avocado, tomatoes and olives on hand for side items. As I’ve gotten back into some pre-week food prep, I’ve gotten back into the habit of making a grain for the week, which quickly transforms into easy meals.
All in all, I really appreciate having access to so many healthier convenient items that seriously helped me out over the past couple of months. I’d be lying if I said she didn’t enjoy her fair share of grilled cheeses, too.
FYI- the carrots were all from frozen and were not a hit. She’s not a fan of cooked carrots. Can’t say I blame her with that one.

Our kids eat very similar to this list. I feed them cheese sticks/cut up block cheese, crackers, yogurt, fruit (Clementines right now are a huge hit!), lara bars, homemade muffins, hummus…

I remember how hard it was to feed baby #1 while dealing with morning sickness from baby #2. It did make it hard to get healthy meals on the table. I think that’s how Cupcake became addicted to peanut butter & jelly. It was about the only thing I could stomach to give her for a while!

My son was eating a lot of pb&j and mac and cheese during this first trimester. And so were me and my husband! Something about the thought of cooking just made me want to die… luckily that’s kind of changed the past week or so 🙂

You are seriously a mom to look up too. Love the ideas of quick meals as I am still dealing with a picky eater on my hands but at least she eats, right?!?! Hailey is such a good little eater. I am going to try tonight the Annie’s Mac & Cheese with some spinach and edamame.

I’m looking at these foods, and I don’t think Penny would eat any. Since we raised her on a more Paleo diet, she won’t eat pasta, or sandwiches really, and she isn’t a fan of oatmeal… all the good convenience foods! She wants bacon and eggs in the morning haha

I try really hard to not rely on healthy convenience foods too, but man they are helpful in certain times! I’d say you did great for battling morning sickness. I remember it from my first baby and I don’t know how I’m going to do when I get pregnant again!

The edamame in the mac n cheese is genius…I will definitely be trying that. Molly won’t eat those microwavable Annie’s bowls though – makes me go with the original stovetop version, takes so much longer! She also will not eat cooked carrots, goofy toddlers.

Thank you so much for the ideas! My little dude is turning 1 on the 17th this month and all he really wants is real food now. We are a gluten free family, not by choice but we also do
n’t eat dairy or soy products, so all of that does limit us. We try to always stick to real whole foods, and luckily our little dude prefers it that way. He doesn’t really like processed foods! Anyways its starting to get difficult cuz I’m not used to feeding him anything other than a bottle or purees, but I know it’ll just take time!:) thanks again!

I don’t have any kids, but I love that you do this! It is so encouraging to see that there can be healthy “kids” meals! When I am a mom I definitely want to make sure my kids are getting the nutrients they need from the food that they eat.

You are so right, prepackaged meals can be quite expensive. Great idea to get little ones to enjoy healthy snacks such as fruit, salads and veggies, most of which are quick to prepare.
