I was determined that yesterday was going to be a good day whether it liked it or not after the previous day’s antics. And every good day starts off with a good breakfast, right? So I spent a little more time and mess to create a hearty one to start off this WIAW.
I remember thinking omelets were so intimidating, but they really aren’t! Here’s a quick version of how I make an easy omelet…
1. In a Tbsp of butter (love me some Kerrygold!), sauté diced veggies of choice (I used peppers, onions and tomatoes) over medium heat. Meanwhile crack eggs (I used 3) into a bowl and mix well.
2. Once veggies are soft, pour in egg mixture. Allow the bottom to set, them use a spatula to lift the edges of the egg and tilt the pan so they still-liquid egg can flow underneath it to cook and set, too.
3. Pour about 2 Tbsp of water around the edges of the omelet and cover immediately. Let it sit like this for 2-3 minutes until the egg is cooked on top.
4. Add cheese of choice (I used Cabot cheddar, but also love feta or goat cheese) to half the omelet, then flip the un-cheesed side over to cover the cheese and turn off the stove.
5. Slide onto a plate and enjoy!
I shared the omelet with Hailey and the day began! Morning was spent at play group.
I really love spending time with these ladies and our now ELEVEN kids between us. There is always a fun topic of conversation and kids saying cute things.
I grabbed lunch once we were home and both girls were asleep. In my baby freezer meal prep, I included these black bean burgers. I made them, formed them, then froze them layered between sheets of parchment paper. I defrosted them Sunday and baked them all Monday and have been enjoying them for lunch all week, topped with mustard and sriracha.
While we are discussing food (aren’t we always?), it’s one of my favorite things about blogging. Some people work for peanuts. I work for almonds and LOVE.
David surprised me by coming home early. I was psyched to fit it a wog with Kaitlyn and quickly changed clothes… only to realize I had left the stroller at play group. Mark that down as day 2 of wearing workout clothes without purpose.
Still, my arms are feeling it this morning thanks to swinging this one around all afternoon.
I started dinner on the early side so I could try a new recipe. I enjoyed learning a new technique of braising and smashing fresh tomatoes to make a broth that included white wine, garlic and shallots.
However, the recipe itself only turned out so-so.
Side note: that’s actually Steelhead trout, not salmon. It was hard to taste the difference in the tomato sauce!
Then this happened:
I’m not usually big on desserts, but you can’t say no to this ice cream and a still-warm chocolate chip cookie!

Omelets are so hit-or-miss for me, and I think a lot of it has to do with the pan. I’ve been known to ‘change my mind’ from wanting an omelet to wanting a scramble midway between cooking breakfast 😉

Breyer’s Fat Free vanilla…..tasty and creamy and no guilt for the most part.
And omlets are a staple in our home, i agree pretty easy if you follow a few steps.

That omlet looks divine! And as far as workouts, I’ve started doing the 10min videos popsugar fitness offers. If she’s napping, I might do 2 in a row (and man do my muscles feel the burn!)
But I’m so jealous you have blue bell ice cream! We definitely don’t in Maryland, whomp whomp.

I started making omelets in college, and I think the more you make them the less intimidating they are. Oh and Blue Bell is for sure the best ice cream! We made homemade ice cream for July 4th, and it was a huge hit with my family! And it was a hit with us of course. 🙂

I call anything I put eggs and veggies in a skillet to make an omelet 🙂 Mine never look as pretty as yours but they are mighty tasty so I’ll take it! I have been in love with eggs this entire pregnancy and think I’ll stick with them as they are easy, fast, nutritious, and cheap!

Omelettes – very intimidating. Actually any egg aside from scrambled I find intimidating, good thing I conveniently don’t like eggs that much 🙂 I’m going to try this recipe. I think I’ve never had a fool proof pan so always ends up being a miss

I do the same thing with black bean burgers! I like to make up several and freeze them so I always have a healthy option on hand.

I am even lazier because I just make a scramble and sprinkle the cheese on top. And I echo your love of Kerrygold. That is one of the things that sets me apart from other Weight Watchers – real butter only, please. 🙂

Omelets are always so hit or miss for me. I’ll have to try the water and covering with a lid technique you use! I’ve actually never done that, so maybe that’s what I’m missing!
I love ice cream and can’t seem to pass up any Ben & Jerry’s, but we also like hitting up the local ice cream shop as well. Cheesecake ice cream may be my downfall.

I’ve never tried the method using the water at the end. I will give that a go. We’re more “Scrambles” kind of people – I love scrambling 2-3 eggs with leftover roasted sweet potatoes and roasted brussel sprouts

I think omelets are easy! Well, as long as you’re not looking for culinary perfection. The only part that really matters to me is that they’re not overcooked; brown or rubbery eggs are awful!
I like pretending I can cook French style and (try to) cook a simple one with just butter, salt and pepper that is juuuust barely cooked, very yellow. Yummmm!

I love omelets! No fear or intimidation for me 🙂 Only a lack of time most mornings. I usually have to save them for the weekend. I love using black beans, spinach and goat cheese too. As for favorite ice cream? Ohmygosh. Anyone who reads more than one blog post of mine, or looks at my insta for about 10 seconds will see how obsessed I am with Publix brand fro yo. THE BEST. Seriously, you have to try it. Whether it’s plain and simple with vanilla, or more interesting with “Chocolate Cookie Quarry,” (chocolate fro yo with huge chunks of oreo-like cookies), it’s all sooo good. My favorite hands down is Roadrunner Raspberry – vanilla with dark chocolate pieces and a raspberry swirl. I rave about Publix fro you all.the.time. 🙂

I use the water+cover technique to make sunny side up eggs, but that’s a smart idea to do that for omelets too!
