You laughed, right?! Anyways, on dreary mornings, I usually like to reach for a cup of comfort in the form of coffee. But, if you haven’t noticed, I haven’t had coffee in a while. But yesterday, I did. And yesterday I felt these weird heart palpitations all day. They were sporadic, but definitely enough that I noticed. Was it due to my extra bold coffee? Or was it excitement over my new iPhone 4? I’m not sure, but I thought it would be safest to bypass the coffee today (because y’all know I won’t be giving up that iPhone anytime soon) 😉
Anyways, ever since I saw Alycia make the following breakfast and it reminded me of when I had it growing up, I’ve been craving it! So this morning I took a piece of Ezekiel , slightly toasted it and punched a whole through it using a glass.
Cracked one egg into it…
Let it cook over medium until it was about this done:
Then flipped it, let it finish cooking and served it up! The yolk stays slight soft and delicious!
I also ate 1 piece of bacon (nitrate/nitrite free). Why nitrate/nitrite free? Here’s a good, quick synopsis:

I don’t know if I have mentioned it yet or not, but I am going to see Dr. Oz speak on Tuesday, July 7th. To say I’m excited is the understatement of the century! 😀 He will be taking Q&A… can you please help me think of a good question?!

Do rainy/cloudy days sometimes make you more productive? For some reason, it’s been that way with me today. I guess since I can’t be outside I feel the need to do as much inside as possible. So between on working on N.E.W. Lifestyles‘ newest undertaking, studying, laundry, taking Koda to get a pup-icure (a doggy pedi ;)… or just her nails cut!), working out with Jillian, locating lost mail packages and getting ready for my guests this weekend, I feel pretty darn productive 😀 Here are the eats that have fueled my day:
Black bean burger on our last white bun (why do I feel so bashful when I admit to eating a white bun? I feel like you’re judging me… are you? I had to get rid of leftovers! :P)
Then there was this:
There were a lot of beans and rice stuffed into this can. Did I need to eat the whole thing? Absolutely not. But did I?
Absolutely.
YUM! Then, because that wasn’t enough spice, I snacked on this:
More carrots and celery dipper in a yin yang of texas pete wing sauce and bleu cheese dressing! You know after you eat wings (no? Please tell me I’m not the only one who eats wings?!)… well my favorite part after I eat wings is the celery that is soaked in buffalo sauce. So I tried to recreate this experience in a healthier way… minus the wings 😉
I’m still feeling snacky, probably because I haven’t had a “real meal” yet… oh well… rainy days are for snacking!

So it seems my last snack picture was a bit “off”… still learning the ends and outs of the iPhone! Today was a long day. I refrained from whining on the blog (because who wants to read that?!), but I’m exhausted from the stress of today. To top it all of, I was going to make jambalaya for dinner, but the spicy chicken sausage had expired, and it was slimy… EW!
Instead I decided on a sure thing : Shrimp Pasta! Served with leftover salad. It was quick, easy, filled up Hubbs and, most important, yummy!
After this plate, I had a a small second helping of the pasta… gotta love comfort food 😉
Now to relax for a bit before getting a good night’s sleep. Tomorrow will be a better day… I know it!

I have a blackberry and I don’t know if I could trade it it! Do you like the iPhone better?! I do think that it has a lot more cool options, but I don’t think I can give up my BBMing! And that toast and egg idea is genius. Why haven’t I ever though of that?!
