Where oh where do I start?
Christmas.
…was better than I expected. And I expected a lot. 😉
It began on Christmas Eve when family started showing up around noon. I fed them a quick lunch, before putting them to work in the kitchen.
What can I say? I’m one tough hostess!
…and I couldn’t have put everything together without their help!
The women got to work on pecan pies, potatoes and prime rib, while the men sampled David’s home brews.
Nannie is a southern cooking extraordinaire and was put in charge of her famous pecan pies.
Mom went to work on boiling potatoes, dicing onions and dolling out the necessary butter.
I was in charge on one pricey piece of meat. And I was nervous.
I decided to follow my butcher’s recommendation. After a simple rubdown with salt and pepper, I placed it on the rack. Underneath were some sliced carrots and onions for no purpose other than I thought it looked pretty.
The moms look pretty too, don’t they?
The prime rib was put into the oven at 500 degrees. After 20 minutes I decreased the temperature to 325 degrees and roasted it 15 minutes for every pound. It was a 7.5 lb prime rib, so about 1 hour and 50ish minutes.
After church, and a beautiful candle light service, it was show time.
The table was set…
The asparagus was replaced with broccoli because out of 5 grocery stores, all were out of asparagus…
The potatoes were perfectly browned… and the prime rib…
was beautiful.
It sat for about 15 minutes before it was carving time.
We all help our breath as David cut into it…
perfection!!!
Exactly how I had hoped it would turn out… the ends were medium to medium well and the center was a nice medium rare. I was SO excited!
I topped my piece with some of the burnt crispy onions from the roasting pan. DEEeeeelicious!!!
Christmas eve dinner was marked down as a success!
…so was the rest of the evening, which included Christmas carols on the piano,
a little puzzling,
a little White Elephant-ing,
and pie, of course!
What’s the matter, SIL? Did they leave you with the smallest piece?
And Koda’s own version of dessert… raw hide.

It looks like a wonderful evening! We actually stayed in and skipped the Christmas Eve party we were invited to, so it was leftover soggy pizza for us.

The beef tri-tip we had was excellent, but I won’t lie….I loved the stuffing best. I know. I know. It was just Stove Top…but my confession is that I LOVE Stove Top! 😉

Yum! Your dinner looks perfect. We do appetizers on Christmas Eve and had mini ham and cheese sandwiches. They were my favorite. I hope you had a great Christmas and are still enjoying the holiday season 🙂

I am SO impressed that you made prime rib! I wish I could have shipped you our asparagus, as we ended up not using it. 🙂 [Looks like you did alright without it…and besides, that pie looks so good I’m sure no one was worried about the vegetables…]
