WOW, the weather was amazing this weekend… simply gorgeous! 65 degrees and sunny offered some much needed relief from the cloudy and cold weather we’ve been having lately…
In honor of the rare spring weather in January, I whipped up a special sandwich (or two) for the Hubbs. It was a keeper! Just one bite made you feel all summer-y inside…
I started with some freshly baked, organic sourdough (freshly baked at the store, not my kitchen FYI). I toasted it, then added some Cabot Sharp Cheddar.
Then the man-friendly topping of (nitrite FREE) bacon…
topped with sliced tomatoes…
avocado…
lettuce shreds…
and another slice of the delicious sourdough.
It got rave reviews … from my sweetheart with the webbed feet.
No, not that one… this one!
Then weekend ended on a high note with a Charlotte blogger dinner at George’s Brasserie in South Park.
Where I enjoyed a Bibb Lettuce Salad with a Goat Cheese Crouton (I totally could have eaten a billion goat cheese croutons, but alas, I focused on simply savoring the one that came with it) YUM.
and a fancy-fied crab cake. As a quasi-food blogger, I should do a better job of learning how to describe my food- oops. The crab cake was so-so, but the corn sauce (haha, I’m so not a foody! I’m sure it is a compote, or reduction, or some other fancy word I don’t understand) surrounding it was delicious!
But the best part was getting to chat with all the wonderful ladies!
Brittney, Jackie, Heather, Caitlin, Kelly, Diana and yours truly!
I am working on a a breakfast recipe that I hope to post tomorrow- fingers crossed that it’s not a FAIL 😉
What was the highlight of your weekend?

That’s how I always feel when describing food too. I’m not a foodie by any means. Except with dessert maybe. 😀

I’m pretty sure I would have called it “corn sauce” too. 🙂

How fun! And I’m a little jealous of your weather, I have to admit.
By far the highlight of my weekend was that my children, who had been sick earlier last week, were well in time to celebrate my daughter’s birthday as planned! 🙂
