Ask and ye shall receive!
So yesterday was monumental… it was the first time I’ve ever made up my own recipe for baking!!! Yes, it’s a risky move because baking is far more scientific than cooking, but after researching multiple recipes for a protein-rich, low fat banana nut muffin, I realized it would be easier to attempt creating my own.
I work with some clients that have a hard time fitting protein into the morning rush, so I wanted to try and create something that they could make ahead of time and grab as they are running out the door.
So here it is (!!!) …
Healthy Banana Nut Protein Muffins

3/4 c all purpose flour

3/4 c whole wheat flour

1/3 c protein powder (I used vanilla)

3/4 c organic milk (I used 2%)

1/2 c walnut pieces
-
1/4 c natural applesauce
-
1 egg
-
2 organic bananas (the riper, the better)

2/3 c honey
-
1/4 tsp baking soda
First, get out the handy-dandy mixer and add you dry ingredients into the mixing bowl.
In went the 2 flours, baking soda and protein powder.
In a separate bowl, mash your bananas… a great stress reliever!
Then add your honey and do your best to refrain from just eating the banana and honey mixture.
Mix well. Then add your milk, applesauce and egg and mix well.
Back to the mixer… begin mixing your dry ingredients and slowly add in the wet ingredients while mixing on a low setting.
I was so excited that the consistency looked pretty good!
Then in went the walnuts and I gave the batter a final stir stir stir!
I divided the batter equally into the muffin pan to make 12 muffins.
Then I popped them in the oven at 375 degrees for 20 minutes and Wah-Lah!
I was pretty impressed with myself (obnoxious?). They are not light and fluffy, more of a dense and chewy texture, but with NO oil and no refined sugar (just honey), plus protein, I think they are a success!
1 muffin : 170 calories, 30 g carbs, 3.5 g fat, 5 g protein, 52 mg sodium
Pairing this muffin with a Greek yogurt would make for a healthy, protein rich start to your day!
And just because she’s my cute little baker’s assistant… 😉

uh yeah, yesterday I tried to create my own gluten free banana bread recipe, it was disgusting, haha. I am a good cook but not a good baker even with a real recipe so I don’t know what I was thinking!

Oh wow! Very impressed! These look great! I’m not usually a muffin person,, I just feel more satisfied with something like a bowl of oats or toast and PB but for a snack? Perfect!

I’ve also just attempted baking my own muffin recipe and it didn’t quite turn out 🙂 I’m pretty sure it was due to the wheat flour, but they tasted good! Anything with banana is always a hit!

Oh yes, I have tried to make my own recipies and they are hit or miss. Something about baking does not lend itself to too much experimentation for this girl!
The muffins sure do look great- can’t ask for more than tasty AND healthy!

Way to go! I think that creating my own baking recipes is SO hard! I’ve done it a few times with blueberry banana bread and muffins before! These look great!

Would you recommend any other changes to the recipe if leaving out the protein powder?
I haven’t done any no-recipe baking since the hamburger buns that I wrote about a month or so ago. I haven’t done a lot of baking since then, other than birthday cake, and experimental birthday cake prototypes.
