Thank you so much to everyone that provided a guess as to what my mystery CSA item was yesterday. After from hearing from a few people that their best guess was ‘leeks’, I decided the vegetable from there on would officially be considered a leek.
A purple leek.
Because those exist?
Anyways…
Determined not to let the funny veggie go to waste, and encouraged by the cloudy skies, I decided it would be an OK day for soup.
After all, it was cool enough out for Koda to lounge outside and eat salad (or some may call it grass).
And, lucky for me, I had some leftover potatoes from last week’s CSA pick up.
After extensive googling, I couldn’t decide on a recipe. Instead, I chose to make one up, using what I happened to have around the house.
Assorted Potato & Purple Leek Soup
- assorted potatoes, diced (about 2 cups. I used sweet potato, red potato and the little white guys, because that’s what I had)
- 4 purple leeks (or regular leeks)
- 4 c vegetable stock
- 1 Tbsp butter
- salt
- 1/2 c almond milk, unsweetened
- 1/2 c skim milk
Simple ingredient list, right? It was! But I forgot to add one thing in… BACON.
I cut up 1 slice of bacon and put it into a large pot with my butter.
While the bacon sizzled, I diced my veggies.
Once the bacon was cooked, I added my leeks and a solid shake of salt and let them cook over medium-low heat for about 25 minutes, stirring occasionally.
After 25 minutes, I added my diced potatoes and the vegetable stock.
I let it simmer at medium-low for 45 minutes, until the potatoes were soft. At this point, I would have used my emulsion blender… if I had one. But I don’t so instead, I took 2 batch of the chunky soup into the blender.
With the middle part of the top removed (to allow steam to escape), I blended my soup!
Once all had been blended, I returned everything to pot and added my milks.
I stirred it all together over low heat until everything was warmed, then served it up!
Garnished with sliced leeks and freshly ground pepper. (Ok, you caught me… it’s not freshly ground. It’s sprinkled out of the black pepper can.)
The result? Success!
The soup was light with a delicious, mild flavor. I gulped it down and really enjoyed it.
Plus, it is a light soup!
For 1 cup, it only has 93 calories, 15 carbs, 2 g fat, and 2.5 g protein.
The batch makes 7.5 cups total.
Before the pregnancy hate mail comes, I’m not trying to go LOW CAL and starve my baby (as a select one or two people have sent emails about…), I’m simply impressed that I created such an easy, healthy, homemade soup- that’s low cal, too!

Y-u-m! I love soup all year. I never make pureed soups like that, but I really ought to because I do love them! Your potato leek soup looks great! I made veggie chili for dinner last night (does that count as soup?).

I never give up soup! Your potato leek soup does sound good. I wouldn’t hate on a low-cal soup. I’d just have a second bowl. 🙂

The soup looks delicious — and good call on the bacon.
We actually eat more soups on the summer — soup/sandwiches is a meal we eat all the time. In the winter we eat more hearty stews/chilis/soups, but we like warm food year round!

I just noticed I had all the stuff in my pantry to make chili yesterday, but I just couldn’t bring myself to make it with the weather being so nice and warm… I think soup season is over for me 🙂

LOL, I love your disclaimer about the “pregnancy hate mail.” Some people have too much time and too many opinions on their hands. It is obvious you are very knowledgable and care so much for your baby already. Soup looks great! Although I’m not sure I could stop at one peice of bacon 😉

I have yet to give up soups because it is still FREEZINGGG in Chicago! Plus, I am usually the one eating soup on really hot days because the air conditioning inside makes me so cold!

Anyways, I’m impressed by your soup! It looks really light and delish! I don’t think I’ll be giving up soup in the summer – I love it too much. Although, I do have a couple of cold soup recipes I want to try out. 🙂
