Remember when I had a grand plan to count calories? Yeah… that lasted about a day or two. I still may try to count calories in the future, but right now I’m just focusing on keeping my eats healthy and enjoying the Christmas season. How’s that working for me? I guess I’ll let you know next week when I measure for my 3 month post baby body check in!
Breakfast
Half a Thomas whole wheat bagel with some Wholly Guacamole, tomato (off my plant on the porch!) and a dippy egg. It may sound odd, but it’s a pretty tasty combo!

Snack
FYI: 100 calories of almonds does almost nothing to stop hunger, but I had these left over from an event and it’s all I could grab as I was running around and luckily lunch followed not too much later.
Lunch
Hailey and I met Hubbs at Fusion Bowl in Mooresville to grab a quick lunch. Remember how I said I like tofu in hot and sour soup? Well, it continues to not disappoint!
I ordered veggies and shrimp with brown rice, but asked for it to be steamed with the sauce on the side. I may not be counting calories, but I know it saves me a lot to be able to control my own portions of brown sauce and I don’t miss out on any of the taste! In fact, I think it’s better when it isn’t swimming in brown sauce.
Then we were off to finally PICK OUT OUR CHRISTMAS TREE!
As you can see, Hailey was worried about the price, but we ended up getting a good deal 😉
Snack
I almost finished a whole sausage by myself, until the last bite fell on the floor. The 5 second rule isn’t even able to be attempted in our house, thanks to this little sniffer
And I also put a serious dent into this hummus.
Dinner
I tried out a new recipe from Whole Foods and it turned out to be really good! It wasn’t the typical flavors I usually cook with, so it was fun to switch it up. The red onion and spinach saute was flavorful, and the pears and blue cheese over the chicken felt very fally. Hubbs really liked it.
The plan was to finish dinner then decorate the Christmas tree. It was delivered on time (LOVE having Christmas tree delivery) and we had the Christmas music cued and a fire burning… only to discover it won’t fit in our stand.
Apparently I have a penchant for big trees.
So Hubbs ventured to ACE Hardware and Lowes to find a stand while I had Hailey try on her new bow…
…only to discover that both ACE and Lowes were out of tree stands.
So now the tree is in a bucket of water as it awaits its inside home. So I need some help…
Does anyone know where I can find a Christmas tree stand??

Oh no! Walmart maybe? The bucket could always work in the long run if you fill the sides with something. It’s a cheaper option! 🙂 haha

Hailey looks adorable in her Christmas bow. I love our stand that we got at the place where we bought our tree–one size fits all trees and you don’t have to tighten screws because it has a spike in the middle and the tree farm bores a hole in the bottom of the tree and you just sit it on the spike–works great!

Good luck with the tree stand! I have to admit that I kind of like my rice and veg swimming in the brown sauce, but I’ve been trying to order it steamed with sauce on the side whenever I remember (or have the willpower) to do so. Baby steps… 🙂

Ok so a few things here….1) I starting counting calories last year and was addicted for several months, then at some point this past spring I stopped. But I started up again because I realize that I really do eat so much better when I count. I started out using the Calorie Count app on my iphone but recently found an even better one- MyFitnessPal. If you are interested in starting to count ever again, I highly recommend this one. It makes it so easy and has just about all of the foods you could imagine. I know counting calories really is just a personal preference though, but I have found that it really helps me and keeps me on track.
On another note, that bagel you had for breakfast looks DELICIOUS! And Hailey in that bow is absolutely adorable.

I always order stir fry sauces on the side too because I know that at some restaurants, the sauce can bring the dish up to over 1000 calories!

I love avocado with my eggs, so it makes sense that guacamole would pair nicely with eggs, as well. Doesn’t seem too strange to me!
