Hey all! Still beaching it up, and as you can tell from yesterday, I’m not eating quite like I normally do. Luckily, I’m able to keep Hailey (10 months old) somewhat on normal eating, without having to spend a lot of time in the kitchen. After all, who wants to be in the kitchen when there is an island to explore?!
Dinner last night was ready in about 2 minutes. While I warmed up the brown and wild rice, I drained and rinsed the beans. Then, sliced the avocado and VIOLA- dinn-ah!
Ok, I threw in a slice of red bell pepper, too because it was around. It doesn’t get much easier and quicker than this.
Now I need to just follow Hailey’s lead and stay healthy on vacation!

I think it’s a prerequisite of vacations that you eat less healthy – at least a little bit!

That looks so yummy and perfect for kiddos! Mine love their beans too. Love love. They may be gassy bec of it but I’m glad they are healthy!

Great link up! I missed it this week but will be back next week to share. Avocado and black beans are two of my favorite foods for little ones. My older three never had trouble with beans at all and they ate TONS of them. I’m a little worried, though, because my current baby has trouble when I eat too many beans. How does your little girl handle them? Do you restrict how many she eats?
