David gets up pretty early for work. In the early days of marriage I’d often wake up and make him breakfast. Guess I was trying to go for wife-of-the-year? Well, the honeymoon is over and now he’s often out the door as I’m waking up. Because of this, I’ve stuck him with bagels and cream cheese. Everyday of the week.
Lucky for me, he doesn’t complain, but I wanted to switch things up for him, because, well, he’s pretty great. Therefore he totally deserves a burrito.
…because burritos are awesome.
Make Ahead Breakfast Burritos
You will need-
- 16-20 large wheat tortillas
- 12-14 eggs
- 2 white potatoes, peeled and diced
- veggies of choice (I used zucchini, red pepper, onion & spinach)
- sausage or bacon (optional)
- cheese of choice (pepper jack adds a lot of flavor)
- salsa
- olive oil
- foil
First up, prep all your veggies. Add 1-2 Tbsp of olive oil to a large pan and sauté the diced potatoes with a sprinkle of salt and pepper until they are soft.
Put in a large bowl and set aside.
Repeat with the vegetables.
And the sausage.
And the eggs.
This process takes a little while, maybe 30 minutes, so make sure you’re little ones have things to entertain themselves or be prepared for your cabinets to be raided.
Now you’re ready to assemble!
I made a rookie mistake and got mid-sized tortillas. Definitely get the large so it’s easier to wrap.
Add all the ingredients to the wrap. Don’t forget the salsa because it helps keep it soft when reheating. Just a little will do.
Roll it up, wrap it in foil and store in a freezer bag. To reheat, simply unwrap, roll it in a paper towel and microwave it for 2-3 minutes.
The reviews are in and it’s a hit! Only complaint was messiness of a poor wrap job, which is why I recommend the larger tortillas!

That’s honestly really awesome of you to do and I bet he loved the switch up from the regular. My hubby and I used to be total opposites – he was the morning person and I wasn’t, but now that I AM a morning person, I really don’t have a problem with getting up and making pancakes way before he’s even up! haha Take this morning for instance…you better believe I’m making a darn good breakfast!!

I’ve made breakfast burritos for hubby before and he loved them. He asked me to make more, but that was a few months ago………….I suppose I should get on that. And I never thought to add salsa to them. He’d love that!
My favorite quick breakfast is overnight oatmeal. I’ve been slacking on making that, though, too!!

I’m from AUS but we hear a lot about the US election. Unfortunately I have big strong views about marriage equality and euthanasia however I find novels SO much more interesting to read than newspapers and sitcoms much more interesting to watch than speeches . . .
Anyhow I love burritos 🙂 They’re especially good with avacado or hummus.

My fav quick breakfast: On Sundays I will make a week’s supply of either muffins or scones for breakfast for the kids and hubby. It keeps fresh the whole week in your fridge. You can warm up either of these in the microwave for 30 seconds.

I have pretty strong political views too, but choose not to blog about them. But I agree – no matter who wins, I hope we can come together to keep pushing our country in the right direction!
And I love smoothies in the morning because all you have to do is throw everything into blender, give it a whirl, and go!

What a great idea! I would have never thought to make ahead and freeze breakfast burritos and my Hubby and I both love them! Another one of our quick go to favorites are egg muffin sandwiches. Love that all you have to do is pop the English muffin in the toaster add a slice of cheese and I have a neat egg cooker thing that works wonders in the microwave

I feel the same way about all of the political stuff, especially that both sides feel they have the best interest of the people in mind with their viewpoints. I voted, too, and now we just have to wait and see what happens. Whether my selected candidate wins or not, I will get on board and hope that we see some positive changes for our country.
I love the idea of doing a breakfast burrito and am definitely going to try this for Ryan. He also leaves as Riley and I are waking up, so he usually grabs fruit and an on the go type of breakfast bar or has a quick bowl of cereal. If I am up I will make him an egg sandwich, but it’d be nice to give him another option. Thanks!

I think everyone all over the world has ideas about this elections (and probably every US elections for many years now)
My favourite (and probably only breakfast) a cup of special K cereal and half a cup of lactose free 2% milk or occasionally I’ll substitute the special k for 1/3 cup wheat free soft porridge 😉
Lucky me hubby is not a breakfast person and would usually have just a banana or 2
Doesn’t sound like much but considering I used to skip breakfast, this is a lot for me.

I actually voted opposite of my usual political party this morning, for President at least, and it felt a little weird, but then I realized that I too only want what’s best for the country and my family and was making the most informed decision that I could …so no need to feel weird. Good way of putting it 🙂
Smoothies are my quick breakfast of choice in the summer and in the winter, I usually eat some microwaved chicken apple sausage with fruit.

I’m just not a white potato kinda girl, especially in the mornings. Although this would be amazing with sweet potatoes and black beans. Yum!

I read your blog to find out about exercise, recipes and healthy ways of life, not to read about how you are “pretending” not to comment on politics. Your overall political views are blatantly obvious. If you really want to bring people together and avoid perpetuating the division, you should probably just stick to what you claim your blog is about.

My favorite breakFAST is an egg sandwich. I make a bunch of hard boiled eggs ahead of time and keep them in the fridge. When I’m packing my lunch bag in the morning, I throw two eggs, a slice of cheese and either two slices of bread or a bagel thin in a container. At work, I toast my bread and heat my sliced egg whites (I’m not a yolk lover) in the microwave. Then assemble and eat! I’ve been slacking on making the eggs lately, but I really need to get back on that. It’s delicious!

Hello! I recently found this recipe and my husband and I loved it! However, we cannot seem to reheat the burritos without them getting very soggy. What am I doing wrong?

Hm, I’m not quite sure, but do check and see if you have hearty tortillas, that will help. If they are still soggy, decrease the amount salsa, make sure the veggies you choose are less likely to get soggy (peppers, onions) and try putting the cheese as the first layer to act as a barrier.
