Those are the topics I claim to blog about, but sometimes I get sidetracked into talking about weddings and such. Since the beautiful wedding put us home late on Sunday, yesterday was productive (see, trying to stay away from the work busy!) as I set life up for the week.
First things first, I needed a sweat session. I wanted one that would let me feel it the next day in my thighs and I’m happy to report that this one did the trick!
I made a couple alterations for no other reason except they felt right to me. I used 9 lb weights and did 12 reps each round. After a few days of indulgent food and feeling soft, sweating felt so good.
Why yes, I did search for a filter that would smooth out my makeup-less face.
I also geared up for this week’s eats.
Monday– Taco night!
Tuesday– Greek-Style Shrimp with Quinoa Linguine and Roasted Asparagus
Wednesday– Grilled Salmon, Roasted Sweet Potato Rounds and Broccoli
Thursday (HALLOWEEN!)- Sweet Potato Chili
Friday– Baked BBQ Chicken, Garlic Mashed Potatoes and Tomato Slices
Breakfasts: Eggs on Toast, Oatmeal, Fruit
Lunch: Leftovers, Grilled Portobello Sandwiches, Millet and Vegetable bowls
Then Hailey and I hit up Healthy Home Market and Josh’s Farmers Market.
Totally grocery cost: $124
I’m not sure what prompted me to grab millet, but it was my first time making this gluten-free grain.
I used a mixture of water and chicken broth and it cooked up in 30 minutes.
I plan to use it on salads and in veggie bowls. I also served it with taco meat last night to Hailey and she approved.
Speaking of Hailey, she was still sad yesterday about leaving Nana and Papa’s house. In fact, she woke up from nap whining about it, so I decided we needed to have some fun. We spent the afternoon throwing leaves in the air (which she loved!), playing with stickers and doing holiday crafts.
She even got in on helping me make dinner by washing the peppers… and creating a disastrous indoor water table.
Her new jeans tend to sag during the day. I promise I’m not raising a hoodlum.
While she hosed the kitchen down with water, I made taco meat.
I’m a big fan of adding finely diced veggies to taco meat for added flavor and nutrition. Try it!
After dinner we watched an episode of Season 2 of Homeland before calling it a night. Despite it having the longest intro of any show ever, I’m a big fan.

Looks like a great workout and yummy eats! Hailey helping in the kitchen is just adorable too! I also had lots of sweets and desserts this weekend, so working out and refreshing my eats felt awesome.

I just tried millet recently for the first time, too, and I really like it! It kind of has a corn-like flavor to me, so I’ve used it in “Mexi-bowls” in place of the usual brown rice or quinoa – it’s perfect for that!

Are you gluten free? I’m giving it a try to see if it helps my allergies but I’m stumped on what to feed my family!!

I’m not gluten free. I eat close to it because I try to focus on whole foods, but I definitely still love regular pizza and bread. I went gluten-free for a little bit, but found it too restrictive for me since I don’t have any true digestive issues with it.
As for eating gluten-free, pick up gluten-free grains like millet or quinoa. You can use it on salads, in stir fries, as a side. Then eat lots of veggies, proteins, fruits and healthy fats like nuts and avocados. Good luck!

My boy gets saggy bottom in his jeans too. They get stretched out, I guess.
I need to try that on the taco meat. Great idea! It also makes meat go farther. I am always looking for tricks like that so that I can afford to buy the organic meats (and stretch them to get more meals).

I really like it! As with any grain, you can flavor it any way you like. I had it for lunch (part 1 ;)) today with lettuce, leftover taco meat and fixins- delicious! Hailey eats it happily too.
To stretch meat further, try adding beans, too! 🙂

Does Hailey sit in the seat part of the cart while grocery shopping? My son would sit in there no problem up until a few weeks ago and it pinched his leg – now he won’t sit in it again. As much as I hate letting him ride in the big part of the cart it’s easier/quicker than having him walk.
That work out looks great. How long did it take you to go through 3 times?

I love adding finely chopped veggies to dishes like taco meat. I do the same thing when I make Chili. When I use mushrooms, they end up looking just like the meat and you can’t even tell they’re in there! 🙂
And I’m pretty obsessed with Black List. One of the few shows my husband and I will actually watch together.

I made “wrap stuff” (that’s what Ben calls it). It’s taco seasoning, rice, beans, corn, chopped onions and green peppers. I love it cause it lasts almost all week and I can make bowls, burritos or quesadillas with it. I’ll have to sneak some millet in next time. I’m loving 2 shows lately, modern family (hilarious!) and The Chew on abc. It comes on at one which is usually Oly’s nap time so yay!

I love millet, but struggle to get the grain/water ratio right and end up with little bursts of uncooked bites. Do you have a recipe for taco meat?

I followed the millet recipe on the box (and by recipe I think it was 1 cup millet/2 cups water) and it came out well! I cooked it a little less than instructed though.
No recipe for my taco mix- I finely diced red pepper and onion, sauteed it, then added grass fed beef. Then I added a store-bought pack of taco seasoning. Cheater, I know 😉
