I’m excited to try a new way of sharing my weekly meals with you!
But first, I can’t NOT talk about how amazing this weekend was. (Sorry for the double negative first thing on a Monday morning!).
David was working out of town Friday night, so Hailey and I spent the afternoon strolling Birkdale Village, then grabbed dinner together at Bad Daddy’s Burger Bar. It was a wonderful girls night (errr… afternoon and early evening) out and I hope to squeeze in a few more dates before baby girl arrives!
Saturday morning we headed out again, to breakfast and the Davidson farmers market. We snagged the last gorgeous rainbow chard before meeting up with my good friend, and her daughter at the playground. We played for a few before crossing the street and letting the girls chase squirrels and run wild on Davidson’s beautiful campus.
The weather was 65 and sunny so we spent the entire morning meandering and chatting.
Sunday’s weather was similar- 70 and sunny! With David finally home, we spent the entire day outside again. How could we not? We hung out at a local park in the morning, taking nature walks, running bases and throwing balls for Koda.
And we squeezed out every last possible minute of daylight in the backyard, raking, swinging and planning which plants should go in the garden this year.
What a tease for spring! I’m really hoping it sticks around, though I keep reminding myself that is only February.
Now, for the grub! Instead of sharing what’s coming up this week, I am going to share last week’s meals with a little visual aid. I’m hoping these will be helpful for you if your in a meal rut, because I plan to revisit them when I need some inspiration myself. I’m also going to try and do a better job of updating my weekly meal plans list.
So here we go…
Sunday: Gyro Burgers with Hummus and Feta served with Greek Salad
Monday: Chicken Tortilla Soup with a Cheese Quesadilla
Tuesday– Turkey Burgers with Roasted Brussels Sprouts & Sweet Potato
Wednesday– Turkey Meatballs over Quinoa Pasta with Sautéed Kale
Thursday– Sweet Potato Nachos with Black Beans and all the Fixins
Friday– Bad Daddy’s Buffalo Grilled Chicken with Tater Tots
I didn’t snap pictures of them all, but there was oatmeal with berries, a fried egg on homemade bread with avocado and clementines,
and a breakfast burrito with veggie scrambled eggs, cheese and avocado.
Again, not pictures of them all, but largely they are leftovers in the form of salads (salad green with leftover roasted veggies and blue cheese)
and one day there was a Mexi stuffed baked potato- mmm.

I would say all of those look pretty darn good! I am loving all the burgers….I am craving burgers all the time right now! Think it is time to make a good one….your gyro one may appear in my menu pretty soon! Yum! Glad you had a wonderful weekend 🙂

We did spend the day outside climbing ice bergs/cliffs at a Door County park but it was 12 degrees here. Yes, I said 12 degrees!!!!

I LOVE this post 🙂 I do a good job with meal planning for dinners, but I often let breakfasts and lunches just happen, which I need to change for sure — not just because it’ll help me use up ingredients, but the meals I do for breakfast/lunch are usually so boring!

Faaavorite breakfast is oatmeal or eggs too! I always put peanut or almond butter in my oatmeal and ketchup or tomatoes on my eggs 🙂 Yumm!

can you tell us more about how you’re using your bread machine? i have the same one and sometimes i love it and sometimes i miss store bought bread. i’m trying to stick with it because I like being able to control what we eat, but my 100% whole wheat bread is like a brick and when i make white bread i’m appalled by how much white flour i have to use…even though i’m sure that’s the case when i buy it in the store too.

Honestly, I’m still working on the bread machine. I’ve had wheat bread (1/2 whole wheat 1/2 bread flour) come out marvelously a few times and then some days it will totally FLOP. I have no idea why!
The best results have definitely been when using just bread flour, but I’m determined to keep working at it. I hope to experiment using almond flour and such, but just haven’t found time yet. I’ll keep you posted!

I love whisking in an egg into my oatmeal for added protein! And it actually tasted like French toast…delish!

What a cool idea! Never would have thought to do that. Do you whisk it raw into the hot oatmeal and it cooks it?

Yup, just whisk it in for about the last minute or so of cooking the oats over the stovetop, and if it gets too thick just add in a bit more milk (unless if you like it thick!) But of course its not complete without a scoop of peanut butter 🙂

I’m with you on the weather! It has been so nice here. It’s 60 degrees today and I feel like Spring is here, but I know there is going to be another snow storm because it’s way too early. Oh well…wishful thinking! We always eat oatmeal, eggs, or gluten-free waffles for breakfast. I need to break out of the breakfast rut too! During summer, we have smoothies a lot more too. I also started juicing lately, which is a nice addition to breakfast (and a way to get some extra fruits and veggies).

I eat greek yogurt (+ chia seeds, fruit or granola) for breakfast just about every morning. Sometimes I switch it up and have some chicken apple sausage and fruit. Whatever is quick and easy works best for me!

Ok, so my breakfast suggestion might seem a little strange, but I actually got it from another blog so I’m not the only one! My favorite breakfast as of late is a microwaved sweet potato topped with a big ol’ dollop of almond butter (or your favorite nut butter) and a hefty shake of cinnamon… I’ve also added other fun toppings like hemps seeds, warmed blueberries, coconut, or my favorite granola, but it tastes great as simple as it is also! It is SO satisfying and keeps me full for hours while providing lots of energy. mmm now I’m craving one!!

I am quite envious of that warm weather. I’m soooo sick of the cold and snow this winter! Spring can’t get here fast enough.
My favorite breakfast is coffee, an apple and english muffin with butter and cheese. Not exactly healthy, but its quick and filling.

For most of this pregnancy, i’ve been having waffles or pancakes for breakfast (I make a batch on the weekends and freeze or refrigerate for the work week), paired with a gigantic green smoothie. On the weekends, I’ll also have cheesy eggs and maybe some yogurt and granola (girl’s gotta eat, right? haha)

I made sweet potato nachos for the first time a couple of weeks ago and they were SO good!!! It is so fun to be able to eat nachos that are actually healthy!

I’m so boring when it comes to breakfasts. I always have a bowl of oatmeal with blueberries during the week. On the weekends I like to mix it up with waffles, pancakes, eggs, or something to break up the boring old oatmeal.

I’ve actually been making salads for breakfast lately. Sounds INSANE but I’ve been feeling awesome about it. Like not having to snack at all before lunch kind of awesome.

Today I had a whole grain waffle sandwich. Inside was slices of banana and peanut butter. It was a nice switch up.
