These easy to assemble, freezable, crust-less sandwiches are delicious! They are easy to make ahead of time for popping in kids’ lunch boxes on busy days.
Whether you have kids in school or just need some go-to lunches at home, this is a life hack I think you’ll love. It really does just take about 15-20 minutes of prep work and you’ll end up with more than a week’s work of DIY, healthy, freezer-friendly uncrustables ready to go.
I was amazed at how easily these came together, and with only 3 ingredients: 100% whole wheat bread, almond butter and jelly. Of course you can use whatever bread and butter you prefer or even substitute honey for jelly. Do note that a softer bread will seal more easily than a coarse one.
First, lay out all the bread pieces and roll over them with a rolling pin to flatten them out a bit.
Scoop your almond butter and jelly into a bowl…
and here’s the secret- mix it first!
My mom did this growing up and it really makes the sandwich stay together better.
Spread 1-2 Tbsp of mixture onto the center of half the bread slices.
Layer another piece on top and use a cookie cutter (I highly recommend ) to cut out a circle.
Pull off the remaining bread, but don’t toss it. Use it to make toads in a hole for breakfast, breadcrumbs or for hiding your dog’s allergy pills (just thinking outside the box here).
Simply gently squeeze the edges to create a seal.
Then place the uncrustables on a baking sheet and freeze for 4 hours.
After 4 hours you can wrap them individually or place them all in a large ziplock to be stored in the freezer. To eat, simply pull one of the freezer in the morning and stick it in a lunchbox. It will be defrosted by lunch time and ready to eat. If you need it immediately, simply microwave it for 10-15 seconds and chow down!
And really, who doesn’t enjoy a good ab&j, right?

So I love, love, love this idea for so many reasons!!! Thanks for sharing!!! Lately, with our schedule, we do a lot of getting out in the morning and if all is going well, I would rather not cut our morning short and so we stay out past lunchtime. So PB&J, a Stoneyfield yogurt pouch, clementines, carrots/peppers and cheddar bunnies are packed before we head out the door! I should probably know this answer, but what is the major health benefit of almond butter over peanut butter? We buy all natural peanut butter and there are no allergies in our family, just curious bc I have tried almond butter with the girls and they don’t seem interested. ( though mixing it may make all the difference!! ) Just curious your thoughts…
And to answer your question above, Jayson recently brought home some homemade jam from Asheville and is sooooo tasty! We have it on toast/sandwiches. Such a treat!!
PS- I saw you used Justin’s Almond Butter. I know thats a pretty popular brand, but never paid attention to if its 100% peanut free (i.e. made in a factory with peanuts/other nuts…) but if anyone needs an Almond butter that is 100% free of peanuts ( i.e. has a terrible peanut allergy or has a kid in a class that is peanut free) there is a brand called Barney Butter. I found it at Lowes once and then ordered online bc Avery’s old class was peanut free, but the kiddo that had a terrible allergy could have it on his sandwiches. Just an idea if anyone needs a good brand!

For me personally, with no allergies in the family, we switch out almond butter and peanut butter just to have some variety! Almond butter has more of a texture, so it mixed really well with the jelly and was fun to mix it up. Both are great in my opinion, but obviously almond butter is better if you have allergy concerns, peanut butter is probably better for cost purposes… to each their own! 🙂
I try to keep whatever nut butter I buy on the cleaner side, but a little sugar in my peanut butter is worth it to me. YUM. 😉

Love this idea. I do not have children, but I would totally make these for myself! Ha I love uncrustables and knowing how to make a healthier version is even better! I’m going to nursing school in a couple months and I can see how these would be very helpful to have on hand in a pinch! Thank you for the idea!!

What a great idea! I am just now starting to try nut butters with my son (he is 19 months). So now that we know we are not allergic, I am totally going to do this. It just makes it so easy to pull something out for a quick lunch.
I love sandwiches! PB&J or AB&J is hard to beat. I love PB and banana. And then I am always making creative creations with leftover roasted chicken and sliced veggies. I love them on sandwich thin, flatout wraps or plain wheat bread. Noms! And the more veggies, the better. Oh, and of course cheese!

Pampered Chef makes a little gadget called the Cut & Seal. It cuts and seals the sandwich in one press. Really simple and perfect homemade uncrustable! I love it!

This is really cool. I was thinking, maybe I can use the leftovers to make a bread pudding. Brear pudding usually isn’t too healthy, but there has to be a descent recipe out there.
